Diane received her Bachelor of Science degree in Holistic Nutrition at Clayton College of Natural Health graduating with Highest Honors! She is passionate about educating her clients on the valuable healing properties of whole foods which are foods in their most natural state. She teaches cooking classes and raw foods preparation emphasizing the importance of green foods in the daily diet as well as how to cook and be creative with many different, heart-healthy whole grains. Diane believes in the endless healing properties of sea vegetables as well and teaches how easy it is to sneak them into many of your meals and how important it is to eat them every day. Nutrition & Food CounselingDiane offers individual and group sessions for Nutrition and Food Counseling. She can guide you in choosing foods for disease prevention such as foods to lower cholesterol and blood pressure, decrease risk of heart disease, diabetes, chronic pain, and ease menopausal symptoms. She can help you choose wheat free/gluten free menus, menus to control yeast problems, gas, bloating, IBS, digestive upset. She also teaches ongoing Whole Foods Cooking Classes using lots of fresh herbs and nutrient-dense foods and shows you first hand how easy it is to make healthy food choices taste great!
Fresh fruit & vegetable juices have been shown to possess remarkable health-promoting properties and have been used for centuries by naturopaths to help treat a range of ailments. Lime juice, for example, was found to be an effective cure for scurvy in the sixteenth century and this saved thousands of sailors' lives on their long voyages around the world. Freshly squeezed juices contain naturally occurring vitamins, minerals and enzymes which have not been heated to high temperatures like store bought juices. The nutrients are easily absorbed into the bloodstream and within ten minutes they are nourishing your body's cells! I’m sure you’ve heard that recently, the National Cancer Institute began a campaign to get people to do one simple thing - EAT MORE FRUITS AND VEGETABLES. Specifically, the recommendation was to eat 5 to 9 servings of fresh fruit and vegetables a day, and their reasoning was simple: a diet high in fruits and vegetables will prevent or cure a wide range of ailments such as breast cancer, cancer of the colon, esophagus, stomach, lungs, ovaries, and rectum. Pick an ailment and it seems researchers somewhere are searching for chemicals in plants that will prevent them, or offer a cure for them. These plant chemicals, known as phytochemicals, are the cutting edge of nutritional research because they hold the keys to preventing some of our most deadly diseases such as cancer and heart disease, as well as some of our most common ones such as asthma, arthritis, kidney disease, obesity, and allergies. A fairly convenient way to get in the recommended amount of fresh fruit and vegetables is through blending into luscious smoothies or juicing them with a juicer! Juice therapy has been used to help treat and prevent a whole range of health problems and there is a wealth of evidence to support its use to restore and maintain good health AND it’s easy! Raw and Living food is uncooked fruits, vegetables, nuts, seeds and sprouted seeds, legumes and grains. They are foods that have not been processed in any way, shape or form. There are also some other foods that fall within this category, such as seaweeds, raw carob powder, cold pressed olive oil, and certain spices and seasonings. Whole, ripe, raw, organic foods in their natural state are what help to keep us healthy, vibrant and free of sickness and disease and contain enzymes that assist the body in the absorption and digestion of foods. In general, the act of heating food over 116 degrees F destroys enzymes in food. All cooked food is devoid of enzymes, furthermore cooking food changes the molecular structure of the food. Enzymes are known to be the “Life Force” and the “Energy” of foods. If you eat food that is enzyme-less, your body will not get maximum utilization of the food. This causes toxicity in the body. It is important to eat a healthy balance of raw and living foods to cooked food in order to help your body conserve energy and to give it life and longevity. Always purchase foods that are in their natural state. Is there a difference between living foods and raw foods? Yes there is! In that the enzymes need to be activated through the process of soaking and sprouting. Living and Raw foods both contain enzymes. In living foods, the enzyme content is much higher. Raw, unsprouted nuts contain enzymes in a "dormant" state. To activate the enzymes contained in almonds, for example, soak them in water for just 24 hours. Once the almonds begin to sprout, the enzymes become "active" and are then considered living. Is this a "new" fad diet? Not at all! Consider that during the vast majority of our existence on this planet, what choices did we have for food? What COULD we have eaten before we discovered fire, tools and weapons to capture and kill animals? The original diet for us MUST have consisted primarily of whatever was found in nature: vegetables, fruits, and nuts! What other choices did we have? Clearly, a raw, plant-based diet, eating fruits, leaves, nuts and berries, is the main food staple throughout the history of Humankind! Once you embrace a mostly raw and living food diet, you feel more alive, have more energy, better health, think more clearly, and become more in tune with your body! Diane has learned to create raw food dishes that mimic your favorite cooked food meals. Dishes such as zucchini angel hair pasta with raw marinara sauce, “raw’”violi using thinly sliced turnip and a very tasty seed cheese made with macadamia nuts, desserts such as tropical key lime pie made with coconut crust, raw blueberry pie made with an almond crust, chocolate pudding made with raw cocoa nibs. She has learned mostly from raw food expert, Alissa Cohen, and is eager to share her knowledge of raw food preparation with you. Detoxification is basically the removal of potentially toxic substances from the body for general health purposes. We are all exposed to toxins every day of our lives, and often times, we pay little or no attention to them.
